Description
Most wood-fired pizza ovens make a choice you can see the moment you open the door. The fire lives in the same chamber as your food. That works fine at the scale of a traditional Neapolitan brick oven where centuries of refinement have balanced the relationship between flame and cooking surface. At the scale of a freestanding outdoor oven, it creates practical problems: ash in your food, interrupted cooks every time you add wood, and limited space because the firebox takes up room that could otherwise hold a second pizza.
The Tuscan Chef GX-C2 is engineered around a different approach. The oven has two separate chambers stacked vertically. The lower chamber is a dedicated firebox. The upper chamber is where you cook. The two chambers are connected by vents on both sides of the oven that allow smoke to travel upward from the fire into the cooking space, delivering the smoky flavor of traditional wood-fire cooking without the ash, the disruption, or the space compromise. You can load wood into the lower chamber mid-session without touching anything in the upper chamber. The food never sees ash. The cooking surface never gets crowded out by the fire.
The cooking chamber itself gives you two working surfaces simultaneously. A 1 and one quarter inch thick ceramic cooking stone sits at the floor of the upper chamber, absorbing intense heat from below and delivering it directly into whatever sits on its surface. A removable stainless steel wire shelf above it creates a second level, effectively doubling your working capacity compared to a single-surface oven. That combination is what lets the GX-C2 cook two 18-inch pizzas at the same time, or run a 20-pound turkey alongside sides, or hold multiple dishes at different temperatures across the two levels simultaneously.
The construction is built to hold serious cooking temperatures for extended sessions. The exterior is 6mm quarter-inch welded steel plate with high-heat flat black paint on all steel surfaces. The sides and top wrap the fire and oven chambers in 2 full inches of insulation before finishing in 304 stainless steel. The fire chamber door is 1-inch thick refractory fire brick with an adjustable damper for precise airflow control. That layered construction is what allows the GX-C2 to sustain temperatures between 700 and 900°F comfortably, reach a peak of 950°F when needed, and hold cooking temperature consistently without constant wood additions. To maintain 700°F you add wood approximately every 20 to 30 minutes. Lower temperature cooking requires wood every 40 minutes.
The temperature range is one of the GX-C2's strongest practical advantages. At the low end, 250°F gives you a gentle baking environment for bread and delicate items. At the high end, 950°F gives you the intense heat that creates a genuinely blistered pizza crust in around four minutes. The full range from 250 to 950°F makes the GX-C2 capable of handling virtually any outdoor cooking application: pizza, roasting meats, smoking, baking bread and desserts, cooking whole birds, searing shellfish, and anything else your kitchen can produce.
The stainless steel chimney with spark guard vents smoke cleanly upward. A stainless steel thermometer mounts on the outside of the oven door so you can read internal temperature without opening the door and dropping heat. Stainless steel round side handles make repositioning the oven on its cart manageable. The cart itself rolls on four heavy-duty 4-inch swivel casters with locks, and includes a lower storage rack for your wood supply.
Assembly is straightforward. The GX-C2 arrives 95 percent pre-assembled and requires approximately 30 minutes to complete. An initial curing session of approximately one hour prepares the oven for full-temperature cooking. It can be used year-round including cold climates, provided you heat it up gradually in winter conditions.
