How a Dual Fuel Pizza Oven Actually Works
A dual fuel pizza oven is a wood fired chamber with a gas burner built into it, not a gas oven with a wood tray as an afterthought. On gas, you light the burner, wait for the deck to come up, and cook with a knob. On wood, you build a fire on the hearth or in the wood tray, let the dome saturate, and cook on live flame and stored heat exactly as you would in a wood-only oven.
Most manufacturers design these ovens to run one fuel at a time, and the switch is a matter of minutes, not tools. The one exception on this page is the ItaliaForno Grande Pro Duo, built in Italy with a 75,000 BTU burner along one wall and room for a wood fire on the other, which ItaliaForno rates to run on gas, on wood, or on both at once.
The other shape of dual fuel on this page is the brick dome. The Authentic Pizza Ovens hybrid ready brick pizza oven is a handmade Portuguese firebrick oven with the burner port cast in at the factory; the Vamparossa burner is bought separately and fitted by a licensed installer, and the oven runs on gas with the burner lit or on a wood fire with it off. It is the only oven here that cooks on a thousand pounds of stored masonry heat, and the only one that arrives without its burner in the crate.
What you gain is a dual fuel pizza oven that gets used far more often than a wood-only oven, because the weeknight barrier is gone. What you pay is a premium over a single-fuel oven of the same size, and a burner, valve, and gas certification to maintain alongside the hearth. If you already know you will only ever burn one fuel, you are paying for the other one; our comparison of wood fired vs gas vs hybrid pizza ovens is the place to settle that before you spend the difference.
Gas type matters at order time. The Kokomo 32 and the Summerset 32 are sold as separate propane and natural gas models, chosen on the product page. The HPC Fire ovens are configured for your gas type when ordered. The Pinnacolo IBRIDO and the ItaliaForno Grande Pro Duo are propane ovens. The Authentic Pizza Ovens hybrid ready dome takes a Vamparossa burner in natural gas or propane, chosen when you buy the burner. None of the ovens on this page uses the Halo natural gas conversion kit for the Versa, so if a plumbed line is in your plans, tell us before you buy, not after delivery.
Dual Fuel Pizza Ovens by Configuration
Cart and freestanding dual fuel pizza ovens
The Kokomo 32 Dual Fuel is the lowest-priced gas and wood pizza oven we carry: 35,000 BTU on gas, wood, lump charcoal, or pellets on the other side, about 800°F, a 906 square inch ceramic cooking surface, its own stand, and a lifetime warranty. It is the value answer in this category, and 800°F is a New York style ceiling rather than a Neapolitan one; buy it knowing that.
The Pinnacolo IBRIDO is the wood-or-propane sibling of the PREMIO: 35,000 BTU burner, 745 square inches of cordierite stone, the same accessory kit in the crate. It sells out often, so check availability before you plan a party around it.
The HPC Fire Forno is the heavyweight of the carts: a 2-inch cast refractory dome that holds 1,000°F, 870 square inches of cooking floor, six mosaic tile colors, made in the USA, on a powder-coated cart. At around 450 pounds it belongs on a patio or slab, not a raised deck you have not checked. All three also appear in our freestanding cart pizza ovens collection.
Countertop dual fuel pizza ovens
The Summerset 32 Hybrid is the one true countertop hybrid outdoor pizza oven here: propane or natural gas by model, wood on the rack, a 390 square inch cordierite stone, a viewing window in the door, 932°F, made in the USA. It needs a non-combustible surface to sit on, which is the honest reason to skip it if your only option is a wood table. It lives in the countertop pizza ovens collection too.
The ItaliaForno Grande Pro Duo is the big countertop hybrid: a 31.5 inch square refractory floor, two large pizzas at a time, 1,000°F with ItaliaForno's 850°F cooking ceiling, 420 pounds, made in Italy. It stands on a masonry counter or on the Grande Pro Duo cart ItaliaForno builds for it, which is how it also appears in the freestanding cart collection. Propane only, with the adapter for a US tank in the box; the wood side burns hardwood beside the burner, and a run on both at once is the fastest recovery between pizzas of anything here short of the refractory HPC ovens.
Brick dome dual fuel pizza ovens
The Authentic Pizza Ovens hybrid ready brick pizza oven is the Lisboa Premium or Pizzaioli Premium dome, about 1,250 pounds of firebrick on a masonry base, pre drilled for a Vamparossa gas burner sold separately. On wood it is the same oven as the wood only pages; on gas the burner passes 500°F in about fifteen minutes and holds it with the door on. The Lisboa Premium Hybrid is stocked, the Pizzaioli about 12 weeks, other APO facades a factory special at list plus $500. It needs the cure, base, and cover of every brick dome, and it sits in the built-in pizza ovens collection with the HPC Fire pair.
Built-in dual fuel pizza ovens for outdoor kitchens
The two HPC Fire built-in pizza ovens are the same 2-inch refractory oven as the Forno in permanent form. The Villa drops into an existing counter and vents through the front, no chimney. The Di Napoli ships as a pre-assembled five-piece core your mason clads in stone, stucco, or brick to match the kitchen. A gas line to either one gives you weeknight convenience without giving up wood on the weekend, which is the case for a wood or gas pizza oven in a permanent build. If you are not building or renovating an outdoor kitchen, neither is for you; our guide to built-in vs freestanding pizza ovens explains why.
Compare Every Dual Fuel Pizza Oven We Carry
Every hybrid pizza oven we sell, side by side. Read the peak temperature together with the dome material; a 1,000°F refractory oven and an 800°F steel oven recover between pizzas very differently.
| Oven | Configuration | Gas type | Peak temp | Price tier |
|---|---|---|---|---|
| Kokomo 32 Dual Fuel | Stand included, 906 sq in | LP or NG models | ~800°F | ~$2,500 |
| Pinnacolo IBRIDO | Cart, 745 sq in, accessory kit | Propane | See product page | ~$3,000 |
| Authentic Pizza Ovens Hybrid Ready | Brick dome on a masonry base, 33 x 33 in floor, burner sold separately | Vamparossa burner, LP or NG | Wood fired brick dome, 500°C dial ceiling | ~$3,300 plus burner |
| Summerset 32 Hybrid | Countertop, 390 sq in | LP or NG models | 932°F | ~$4,000 |
| ItaliaForno Grande Pro Duo | Countertop or its own cart, 992 sq in | Propane | 1,000°F, cook at 850°F | ~$5,000 |
| HPC Fire Di Napoli | Built-in, ready to finish, 870 sq in | Configured at order | 1,000°F | ~$5,600 |
| HPC Fire Villa | Built-in, counter drop-in, 870 sq in | Configured at order | 1,000°F | ~$5,800 |
| HPC Fire Forno | Cart, refractory dome, 870 sq in | Configured at order | 1,000°F | ~$6,700 |
Price tiers are approximate; the product page is always current. Every dual fuel pizza oven in this collection is sold at the manufacturer's price with no inflated list prices; the Authentic Pizza Ovens tier is the oven alone, and the Vamparossa burner is a separate purchase.
How Hot Does a Dual Fuel Pizza Oven Get on Each Fuel?
The peak ratings on this page are wood numbers. The HPC Fire refractory ovens reach 1,000°F on a wood fire and hold it between launches because of the 2-inch walls; on gas they run cooler but recover faster than any steel oven we sell. The Summerset 32 is rated to 932°F on wood. The Kokomo 32 dual fuel pizza oven is rated to about 800°F on either fuel. The ItaliaForno Grande Pro Duo reaches 1,000°F and is the one oven here rated to run gas and wood together, with ItaliaForno asking for an 850°F cooking ceiling for the life of the tiles.
The Authentic Pizza Ovens brick dome is a wood oven first, 700°F plus on a fire and never above 500°C on the dial, and on the Vamparossa burner it passes 500°F about fifteen minutes after lighting and climbs from there. Expect a gas session in any of these to sit comfortably in the 700 to 850°F range, which is a leoparded, airy crust in four to five minutes rather than a 90-second Neapolitan.
Heat-up follows the fuel too: 15 to 20 minutes on the burner, 30 to 45 minutes for a saturated dome on wood, longer for the heavy refractory ovens. Read the deck with an infrared thermometer rather than the door dial in both cases. Our post on pizza oven temperature explains why deck heat and recovery matter more than the number on the box.
Who Should Skip a Dual Fuel Pizza Oven Altogether
If you know you will only ever build a fire, buy a wood-only oven and keep the difference; the wood fired pizza ovens at the same size cost less and have less to maintain. If you know you will never build a fire, a dual fuel oven is a gas oven you overpaid for; the gas pizza ovens include lighter and cheaper options. The dual fuel pizza oven earns its price only when both fuels will actually get used, which for most families means weeknight gas and weekend wood.
Every dual fuel pizza oven here is rated for outdoor use only, in open air, with clearance from eaves, railings, and anything combustible, and the wood side needs somewhere for smoke to go. None is certified for a food truck or an enclosed space; the Authentic Pizza Ovens dome also needs a masonry base and a licensed gas installer. If you have nowhere to store dry hardwood off the ground and under cover, the wood side of a hybrid oven will disappoint you the same way a wood-only oven would; our guide to the best wood for a pizza oven covers what to burn and what to avoid.
Shipping, Warranty, and Buying From Crustify
Every dual fuel pizza oven here ships direct from the manufacturer or its distributor, crated by freight to your curb with liftgate service, and every one of them is over the $750 free shipping line; the Authentic Pizza Ovens dome carries the $95 residential liftgate fee at checkout that every APO oven does. Inspect the crate before you sign; freight damage is rare and fully covered when it is noted on delivery. The Forno and the built-ins want two people and a clear path from the curb.
Because we are an authorized dealer for every brand on this page, the manufacturer warranty is valid, which is not something you can assume from a marketplace seller. Price match, financing at checkout, and a real person answering email are standard. If you are torn between two of these, our roundup of the best dual fuel pizza ovens ranks them by peak heat, size, install type, and price, and our post on the benefits of a natural gas pizza oven covers the plumbed-line side if that is where your gas is coming from.
One more thing: a gas and wood pizza oven carries both sets of safety rules, cylinder handling and leak checks on one side, hot ash and clearances on the other. NFPA's grilling safety page covers both in plain language, and it applies to every oven on this page.
Not Sure Which Dual Fuel Pizza Oven Fits Your Setup?
The buying guide walks through fuel, configuration, and budget in plain language, and the built-in collection is where to look if the oven is going into an outdoor kitchen.
