Commercial pizza ovens are separated from the rest of our catalog by three things, not by size or price. The first is a listing: a mark from a nationally recognized testing laboratory that tells a health or fire inspector the appliance was tested to a safety standard and, for food equipment, a sanitation standard. The second is the warranty: the maker has to allow commercial installation, and most residential oven warranties exclude it in writing. The third is duty cycle: the oven is built to run through a service rather than a Saturday night. Every oven on this page states where it stands on all three.
Most health departments write their retail and mobile food rules from the FDA Food Code, and they inspect the unit and the installation, not the oven in isolation. That is why a listed appliance matters more on a truck or in a rented kitchen than in a backyard: the inspector wants a mark to point to. Which Commercial Pizza Oven Is Right for You
The Omcan: the listed gas oven for a truck, a bar or a small kitchen
Buy the Omcan commercial countertop pizza oven when the inspector will only sign off on a listed appliance, when the concept runs on gas, or when there is no room for wood storage and ash. It needs no electrical connection, lights by hand on a standing pilot, and preheats in 15 to 20 minutes. Concession vendors, bars and breweries, cafes, ghost kitchens and pizzerias needing an overflow oven buy this size. Do not buy it for a wood fired menu, a home patio, or a leopard spotted Neapolitan crust; it cooks on ceramic stones at up to 650°F, a different pizza.
The Maximus Prime: the wood fired oven for a truck or a small pizzeria
Buy the Maximus Prime when wood fire is the concept and the local rules allow a wood oven on a mobile unit or under a solid fuel hood. Its 35.4 inch floor holds three or four pizzas at once, it reaches temperature in about 30 minutes, and at about 400 pounds it goes on a truck counter or a stainless stand without masonry. Do not buy it if your inspector wants a listed appliance, if you need gas, or if the truck cannot carry the weight; the securing modification is yours to do before the first trip.
The Maximus Mobile: the same oven for a market stall or a caterer
Buy the Maximus Mobile when the work is a farmers market, a catering setup that travels in a car, or a pop up that serves one pizza at a time. It is the Prime at 27.5 inches and about 200 pounds, with the same construction, and it fits in a hatchback with the seats down. Do not buy it for a truck window with a line; 30 pizzas an hour is a stall, not a service, and the Prime is the right call once the floor is the point.
Who should skip commercial pizza ovens altogether
Home cooks. Commercial pizza ovens bring a commercial warranty, a commercial installation requirement and, on the Omcan, no returns beyond carrier damage. The Hood, the Inspector and the Permit
The oven is the easy part of a commercial pizza operation; the permit is the hard part. Ventilation, fire suppression, clearances and the flue are the questions your inspector will ask, and a truck builder or a hood contractor who has installed pizza ovens for food trucks or restaurants before will have answers. For a gas oven, plan on a Type I hood with suppression and confirm with your fire marshal before you order. For a wood oven, plan on a solid fuel hood and the same conversation. We never say an oven is approved for a use; we point to the marks, the documents and the inspector.

Inspect every crate before you sign; commercial pizza ovens are heavy freight and a cracked slat is worth a note. Damage noted on the delivery receipt is a carrier claim we handle for you; a clean signature gives up most of that protection. The Omcan carries a one year parts and labor warranty through Omcan authorized service and, as a commercial appliance, no returns beyond carrier damage or a warranty defect. The Maximus ovens carry APO's three year structural warranty on two conditions: the cover when not in use, and the securing modification before road use.
