What the Inspector Will Ask, Answered First

Certification: cETLus, the Intertek mark for the US and Canadian gas safety standard, and ETL Sanitation, the Intertek mark for the food equipment sanitation standard. At 24-1/8 inches wide and 160 pounds it fits a line where a 32 inch oven will not, and its single 19 by 20 inch ceramic stone per level takes a 16 inch pizza with room to turn it. Two rack levels, so a second pie or a tray of wings goes in above the first. 26.5″ Single Chamber Countertop Pizza Oven, Natural Gas 32,000 BTU (Item 48081): the middle oven

Item 48081 is the middle Omcan commercial countertop pizza oven, and it splits each rack level into two 13.27 by 20 inch stones, so two 12 inch pizzas bake side by side on a level, four in the oven at once. It is 32-1/8 inches wide and 230 pounds, the size for a bar, a cafe, or a concession stand that runs personal pizzas and flatbreads all night and has 3 feet of counter to give it.

Inside the Chamber: Two Levels, Three Positions, Ceramic Stones

Open the drop down stainless door of this Omcan commercial countertop pizza oven and the chamber is one open box, 19.6 inches deep and 14.2 high, with a removable side rack on each wall. A 16 inch New York pie on the lower level takes six to eight minutes with one turn; a bar pie or a flatbread on the upper level takes four to six. Two levels mean one pizza can finish while the next one starts, which is how a small operation keeps a line moving on one oven.
A thermostat reads the chamber air, not the stone, and the stone is what bakes the base. The infrared thermometer we sell reads the stone surface in a second, and it is the tool that stops a busy hour from turning into pale bottoms as the stones give up heat faster than the burner puts it back. Between pies the burner cycles and the stones recover; if the bottoms start to lag, leave a minute between loads or drop the next pie on the upper level for the first two minutes.

Installation: Counter, Clearances, Hood, and Gas Line
Set the oven on a firm, level, non combustible surface rated for its weight, 160 to 265 pounds depending on width, and level it on the adjustable legs so the stones sit flat and the door seals. Omcan requires 8 inches of clearance from the side and back panels to any combustible or heat sensitive wall, wood, plasterboard and the like, or a heat shield on the wall, plus 6 inches at the rear for service.

Site. A firm, level, non combustible counter or stand rated for the oven's weight, with 8 inches of clearance from combustible or heat sensitive walls at the sides and back and 6 inches at the rear for service. A well ventilated location with make up air for combustion, under a vent hood where regulations require, and nothing blocking the flow of combustion and ventilation air. Level the oven on its adjustable legs.
Gas. Connection by an authorized installer only. 3/4 inch NPT at the rear. Confirm the supply matches the rating plate; if the supply is propane, fit the conversion kit first. Gas rated pipe sealant on every joint, clean supply piping, a step down regulator if line pressure is above 1/2 psi, and a soapy water leak check on every joint before lighting. Never check for leaks with a flame.
Propane conversion. Gas off and oven cold. Remove the front panel. Replace the main burner orifice and the pilot nozzle with the propane parts from the kit, sealing the threads. Flip the regulator converter cap from NAT to LP for 10 inches water column. Adjust the pilot flame with the screw. Leak check, refit the panel, and fix the conversion rating plate beside the original at the back with the installation details filled in.
Before first use. Remove every piece of packaging and adhesive film, including from inside the chamber, and clean the chamber and the stainless with a non abrasive detergent. Dry with a cloth. If the oven was stored below freezing, let it warm to at least 50°F before lighting.
Lighting. Open the bottom plate. Press the red button and hold a lighter to the pilot for 20 seconds, then release; repeat if the pilot does not hold, and after any failed attempt turn the gas off and wait five minutes before trying again. With the pilot lit, turn the main gas on and set the thermostat between 300 and 650°F. Never leave the oven unattended while it is on, and never move it hot.
Shutdown. Turn the burner knob clockwise to off; the pilot stays lit for the next service. For a complete shutdown, all knobs off and the gas supply closed upstream of the oven.
Cleaning. Gas off and oven cold. Damp cloth with water and a mild, non chlorine detergent, rinse, dry. No abrasive or acid cleaners, no bleach, no steel wool, no water jets into the body. Sweep the stones, do not wash them. Wipe salt, vinegar and sauces off the steel before they sit. For an idle period, clean and dry the oven, apply a light film of food safe oil to the steel, and shut the gas upstream.
Annual service. Omcan recommends a yearly check by a qualified technician of ignition, combustion safety, and thermostat operation across the full range. Parts are stock Omcan items; the breakdown for your width lists every number.
WARRANTY INFORMATION
Term. Omcan warrants the 48080, 48081 and 48082 Omcan commercial countertop pizza oven for one year, parts and labor, from the date of purchase to the original commercial purchaser. Register the oven online at Omcan's warranty registration page or by mail to Omcan's Niagara Falls, New York office when it arrives.
Service. Within the warranty period, contact Omcan at 1-800-465-0234 to schedule an Omcan authorized service technician to repair the oven locally, or contact us and we will open it with Omcan on your behalf. Unauthorized maintenance or modification voids the warranty.
Covered. Failures of parts and components in normal commercial use.
Not covered. Improper use, defective or unauthorized installation, damage from operating on the wrong fuel, and any installation in a non commercial or residential setting. Omcan states that the vendor assumes no liability for parts or labor coverage on residential installations and reserves the right to deny shipment for residential use.
Shipping damage is a carrier claim, not a warranty claim. Note visible damage on the bill of lading before accepting delivery and contact us within 24 hours; a written report on the extent of the damage is due within three days of the delivery date on the shipping documents. Keep the original box and packaging until the oven is installed and lit, and for the life of the warranty if you can, since a warranty repair or return ships in it.
