Description

A hybrid brick pizza oven is a hand built refractory dome that burns wood the way it always has and, when you choose, runs on a gas burner instead. Authentic Pizza Ovens builds two of them and this page sells both: the Lisboa Premium Hybrid and the Pizzaioli Premium Hybrid, each a Portuguese firebrick dome with a burner port drilled at the factory before the outer shell goes on, so a Vamparossa gas burner slides into place without a masonry bit ever touching the oven. Pick the dome above. The burner is a separate purchase, detailed below, and wood cooking is unchanged if you never buy one.

The reason to buy a wood and gas brick pizza oven instead of a gas fired steel oven is mass. A steel oven with a burner cooks by flame, and the floor cools the moment the flame drops. A burner in a refractory dome does the same job a wood fire does: it loads 1,250 to 1,300 pounds of firebrick, mortar, and refractory cement with heat that keeps radiating for hours after the valve is closed. The burners come from Vamparossa, a Charlotte company that builds UL listed conversion burners in Italy for this kind of oven, in a manual and an automatic version, for natural gas or propane.

Burner not included. This oven ships as a wood fired brick dome with a factory formed gas port. It cooks on gas only after a Vamparossa M-1 or E-1 burner, sold separately, is fitted by a licensed gas installer.

What Pre Drilled Means, and Why It Is Worth $500

A standard Premium dome from Authentic Pizza Ovens costs $2,795. The same dome sold as a pre drilled pizza oven costs $3,295, and the $500 buys one thing: a hole. It is a fair trade once you see where the hole goes. A Vamparossa burner enters the chamber low on the rear wall, through the firebrick, the rockwool wrap, and the refractory shell, and the gas train sits outside behind it. Cutting that opening through six inches of bonded refractory on a finished oven without cracking the dome or breaking the insulation seal, is the job most owners should not attempt and no warranty will cover.

On a gas ready brick oven the port is formed before the shell is cast. The firebrick course is laid around it, the rockwool is cut to it, the mesh is tied around it, and the cement goes on with the opening already true. The photo in the gas section shows it from inside: a clean port in the rear wall, burner head on the floor in front. That is the entire difference between the hybrid and the wood only Premium. One limit to know before you order. Authentic Pizza Ovens drills only its two Premium domes as stock items, and only in the terracotta arch and white dome finish. There is no Stone Arch hybrid, no Rustic hybrid, no Lume or Ventura hybrid on the shelf. Any other dome in the range can be ordered drilled, at that oven's list price plus $500 and a build time of 12 to 15 weeks, through us. Wood, Gas, or Both: How a Burner Works Inside a Brick Dome

A Vamparossa burner is not a ring of jets under the floor. It is a single head that sits on the cooking floor at the back of the chamber and sends a tall flame up the rear wall and across the dome, the path a rear wood fire takes. The dome absorbs the flame's heat, the floor takes it by conduction and reflection, and after thirty to forty minutes the brick is as loaded as it would be after a wood fire of the same length. Close the valve and the hybrid brick pizza oven behaves like any other refractory oven: the mass does the cooking.

Both is the setting most owners settle on. Light the burner to bring the dome up without tending a fire, then lay a small split of oak or fruitwood beside the head once the floor is hot. The gas keeps the chamber at temperature and the wood adds the smoke and the flavor that a gas only oven cannot. Vamparossa built the burners for gas only, wood only, or the two together. Choosing the Burner: Manual or Automatic, Natural Gas or Propane

Crustify sells the oven. Vamparossa sells the burner, direct, and the two arrive as separate shipments; Authentic Pizza Ovens does not bundle them. Four burners fit these domes and the choice is two decisions. First, control. The M-1 is manual: a push button spark lights the pilot, a dial sets the flame high or low; it runs on a battery igniter and needs no power at the oven. The E-1 is automatic: you set a target temperature on its control box, a probe reads the chamber, and the burner cycles to hold it, the nearest thing to a thermostat a brick oven gets. It needs a 120 volt outlet.

Second, fuel. Each burner is built for either natural gas or propane, chosen when you order it from Vamparossa. Natural gas means a plumbed line from the house, run by a licensed gas fitter, and no tanks to swap. Propane means a cylinder and a regulator beside the base and no trenching. If the line is not already at the patio, propane is the shorter path to a working hybrid wood fired pizza oven. Expect roughly $1,500 for an M-1 and roughly $2,900 for an E-1; confirm current pricing with Vamparossa and name the oven so they size the head.

Installation is the one place the maker and we agree on caution. The burner head slides through the port, the gas train mounts behind the oven, and the connection to the supply is a gas fitter's job under local code, not a weekend project. Vamparossa ships installation instructions with every burner and answers the phone about them. Choose Your Dome: Lisboa Premium Hybrid or Pizzaioli Premium Hybrid

The two hybrid brick pizza ovens in the picker are the same construction with different geometry, and gas changes the decision less than you might expect. The burner works in either. What differs is what you will cook on the nights the burner is running, and how much of the chamber you can reach through the door.

The Lisboa dome stands about 31 inches tall with a 15.5 by 12 inch opening closed by a split cast aluminum door that swings open like a barn door. That split door is what makes it the better gas oven for roasting: open the bottom half, run the rotisserie spit through, and a chicken or a leg of lamb turns in front of a gas flame that never needs feeding, as the video above shows. The Pizzaioli dome is five inches lower, about 26 inches, with a 19.7 by 10.6 inch door that drops down out of the way. The lower ceiling keeps the flame close to the pie, so on gas the rear burner browns a pizza top as fast as wood does; it is the dome to choose if pizza is most of what the oven will do and roasts go in a pan. The floor is 33 by 33 inches, with no spit port. It weighs about 1,250 pounds, and the pre drilled pizza oven version is built to order at about 12 weeks, which pushes many gas buyers to the Lisboa.

Either way the door, chimney cavity, and spout are cast AlSi10Mg aluminum with a borosilicate window, the arch is terracotta brick, and the dome is white stucco that you can paint or tile after curing. If the choice is still open, the honest split is this: Lisboa for a gas oven you will roast in, Pizzaioli for a gas oven you will mostly bake pizza in and can wait three months for.

Cooking on Gas, Cooking on Wood, Cooking on Both

On gas, a hybrid brick pizza oven reaches pizza heat in thirty to forty minutes from cold, with no fire to build first. In the maker's clip above the reading passes 500°F fifteen minutes after the burner is lit, with the dome still climbing. Burner lit, door off, damper open; once the dome clears to white, pizza goes on at 370 to 450°C, 700 to 850°F, about 90 seconds a pie. The floor in front of the head is the working space. Launch to the side, quarter turn every twenty seconds, and pull. On the E-1 the chamber holds its setting between pies.

On wood, nothing on this page is different from the wood only Premium. The burner head stays in place cold, or comes out and the port is closed, and the fire is built in the center of the floor and raked to one side once the dome clears. Seasoned hardwood only, split small for pizza and in chunks for coals; oak for a long clean burn, apple or cherry for sweetness on a roast, hickory sparingly. Never softwood, never treated lumber, never accelerants. The maker's fire starting method is below, and it is the same one for every dome it builds.

Both is where a wood and gas brick pizza oven earns its price. Bring the dome up on gas while you make dough, then add a single split of wood beside the head for the smoke, and let the burner carry the heat while the wood carries the flavor. For a roast, close the door on the burner at its lowest setting and the chamber sits in braising territory for as long as the valve is open, with no coal bed to manage. For bread the next morning, the stored heat is there whether you loaded it with gas or wood; the brick does not remember which.

Installation: Base, Clearances, and the Gas Line

A gas ready brick oven sits where a wood one sits: on a masonry base rated for 1,300 pounds, set with an engine hoist or forklift on the four steel loops cast into its slab, which are cut flush afterward. The base is a U shaped block stand five courses high on a 43 by 43 inch footprint, open in front for wood or for the propane cylinder, with a top slab that carries the weight. The oven arrives finished; there is nothing to assemble but the door and the chimney spout, which ship packed separately inside the chamber.

Clearances to anything combustible are the maker's published figures for every dome it sells: 2 inches at the sides of the dome, 16 inches above it, 30 inches around the stainless flue, 28 inches around the vent bricks, and 47 inches of non combustible floor in front of the door for falling embers. Under a roof or pergola, run the stainless chimney extension through and fit the chimney cap with its spark screen; both fit the 5.5 inch spout on either dome.

The gas line is the one step a hybrid brick pizza oven adds. Plan the route to the rear of the base before the oven is set; the gas train mounts behind the dome and the supply reaches it beside the base. Natural gas is a licensed fitter's job under local code with a shutoff at the oven; propane is a cylinder on the base shelf with a regulator and hose, also connected and leak tested by a fitter. Curing and Cracks on a Gas Ready Brick Oven

Gas does not skip the cure. A new dome holds water, and the five day schedule drives it out slowly: one small fire a day held four to five hours at 60, 100, 150, 200, and 250°C on the dial, with the door closed each night. The burner is the easier tool: an M-1 on low holds a day one temperature a wood fire has to be coaxed into, and an E-1 simply holds the number. Cure on gas if the burner is installed, on wood if not. Either way the warranty requires it, and a hybrid brick pizza oven that skips it cracks like any other.

Hairline cracks appear regardless of fuel, on the dome, around the arch, and at the seam with the slab. Every handmade refractory oven shows them, Authentic Pizza Ovens says so in writing, and they sit in the outer shell, not the firebrick chamber. Who Should Buy the Hybrid, and Who Should Buy the Wood Version

Buy the hybrid brick pizza oven if you want a real refractory dome and know some nights the fire is why it stays cold. Buy it if the patio already has a gas line, or a propane cylinder is no trouble. Buy it if you cook for a crowd often enough that holding temperature with a dial matters. Buy it if you plan to roast on the spit in the Lisboa dome and would rather not tend coals for two hours. And buy it if the $500 premium and the burner cost are worth it against the $2,795 wood only oven for the same dome.

Buy the wood only Lisboa or Pizzaioli instead if the fire is the point and you want a finish other than the terracotta Premium, since those come in five facades and the hybrid comes in one. Buy an HPC Fire or the Ibrido if you want gas without a separate burner purchase and a fitter. Buy the Maximus Mobile or Maximus Prime if a masonry base and a hoist are not in the plan. And skip any hybrid wood fired pizza oven made of brick if hairline cracks will bother you; they come with the material, on gas as surely as on wood.

The crate holds one finished oven, not a kit. Packed inside the chamber are the cast aluminum door and chimney spout with its damper, the Portuguese terracotta baking dish at 10 by 14.5 by 3 inches, the 0 to 500°C dial thermometer, the Ultra Fire crack repair kit, and the installation and curing instructions. What is not in the crate: the burner, which comes from Vamparossa; the chimney extension and cap; the cover; tools; the base; and the gas line. A hybrid brick pizza oven is complete as a wood oven the day it lands and complete as a gas oven the day the fitter leaves.

The cover comes first, because the three year warranty requires the maker's own cover whenever the oven is not in use and because a generic tarp will not fit either dome. The Lisboa dome takes the taller 100T fit of the Authentic Pizza Ovens brick oven cover; the Pizzaioli dome takes the shorter 100W. Covers are made for one dome and are not returnable, so match the fit to the variant you ordered. With the burner installed, the head stays inside under the cover; with no burner fitted, keep the port closed against weather the same way you keep the door closed.

Then the rest. The rotisserie spit, 41 inches long, fits the Lisboa dome only and is the reason to pair that dome with a burner. The starter pack is the peel, turner, brush, and shovel the floor needs. The chimney extension and chimney cap lift the exhaust above head height. The burner is on its own timeline from Vamparossa, so order it as soon as the oven is confirmed and it will be waiting when the crate lands.

INSTALLATION GUIDE & USER MANUAL

Authentic Pizza Ovens packs its installation guide, clearance diagram, cure schedule, and care instructions inside the oven. Vamparossa ships the burner's installation and operation manual with the burner. The summary below is the two combined, so the base, the gas line, and the cure can be planned before either crate arrives.

Before the oven arrives. Build the masonry base to a 43 by 43 inch footprint, five block courses high, open in front, with a top slab rated for 1,300 pounds and the cooking floor landing about 40 inches off the ground. Route the gas supply to the rear of the base: a plumbed natural gas line with a shutoff at the oven, or a propane cylinder position on the base shelf with room for the regulator and hose. Confirm the 2, 16, 30, 28, and 47 inch clearances to anything combustible. Arrange the lift: engine hoist, forklift, or skid steer on the four corner loops.

Delivery and setting. Liftgate truck to the curb. Inspect the crate and note damage on the receipt before the driver leaves. Uncrate, strap through the loops, set the dome square on the slab, cut the loops flush. Fit the cast aluminum door and the chimney spout with the damper handle to the front, then the extension and cap if used. Remove the dish, thermometer, and kit from the chamber.

Burner installation. A licensed gas fitter slides the Vamparossa head through the rear port, mounts the gas train behind the oven per Vamparossa's manual, connects the supply, and leak tests. The E-1 also needs its control box mounted and a 120 volt outlet. No drilling, no cutting, no modification to the dome; the port is the only opening the burner uses.

Curing, five days, before the first pizza. Let the oven sit about a week after delivery. Then one fire a day, held four to five hours, at 60, 100, 150, 200, and 250°C on the dial, door closed each night. On gas, set the M-1 low or set the E-1 to the day's number. On wood, a small kindling fire grown a little each day. Never past the day's target.

Every cook. Gas: door off, damper open, burner lit, 30 to 40 minutes to pizza heat, floor in front of the head is the working space. Wood: seasoned hardwood only, crosshatch stack in the center, torch lit, raked to one side once the dome clears. Both: gas up first, one split of wood beside the head for smoke. Never above 500°C on the dial on any fuel. Sweep the floor before cooking; shovel cold ash out before the next fire.

After. Valve closed at the burner and at the supply. Door closed. Cover on whenever the oven is not in use. Ultra Fire on hairline cracks once the oven has run a few weeks, if the look bothers you.

WARRANTY INFORMATION

Authentic Pizza Ovens warrants the hybrid ready Lisboa Premium and Pizzaioli Premium against major defects in materials and craftsmanship on their structural components for three years from the date of purchase. Crustify Pizza Ovens is an authorized dealer, so an oven bought here carries the full warranty, and we help assemble any claim.

The warranty is conditional. It does not apply to an oven not installed to the maker's guide and local code, to cracking from over firing or a skipped cure, to an oven run above 500°C on the dial on any fuel, to accelerants, softwood, or treated lumber, or to weather damage on an oven not kept under the maker's own cover when not in use. Hairline cracks in the outer refractory shell are normal on a handmade oven and are not a defect. Any opening cut into the dome other than the factory port is outside the warranty.

The burner is a Vamparossa product and carries Vamparossa's warranty, not the oven maker's. Damage to the oven caused by a burner installed contrary to Vamparossa's instructions or without a licensed fitter is not covered by either.

Claims go to Authentic Pizza Ovens by email with the model and variant, the invoice number, the purchase date, a description, and photographs. Send the same to Crustify and we walk it through with the maker.

🍕 Is the gas burner included with the hybrid brick pizza oven? ▼
No. The $3,295 buys the oven with its burner port already formed at the factory, plus the door, chimney spout, terracotta dish, thermometer, and repair kit. The burner is a Vamparossa M-1 or E-1, bought directly from Vamparossa in natural gas or propane, and it ships separately from the oven. Authentic Pizza Ovens does not bundle the two and neither does Crustify.
🍕 Can I still burn wood in a gas ready brick oven? ▼
Yes, exactly as in the wood only Premium. The port at the rear is the only change, and with no burner fitted the oven is a standard Portuguese firebrick dome. With a burner installed you can run wood alone with the valve closed, gas alone, or both together: gas to carry the heat and a split of hardwood beside the head for the smoke. The brick stores heat the same way whichever fuel loaded it.
🍕 What is the difference between the Vamparossa M-1 and E-1? ▼
Control. The M-1 is manual: a push button spark lights the pilot, a dial sets the flame high or low, and it holds until you change it; a battery runs the igniter and it needs no power at the oven. The E-1 is automatic: a probe reads the chamber and the burner cycles to hold a temperature you set on its control box, which needs a 120 volt outlet. Expect roughly $1,500 and $2,900 respectively; confirm with Vamparossa.
🍕 Natural gas or propane, and who installs the burner? ▼
Each burner is built for one fuel, chosen when you order it, and is not converted in the field. Natural gas needs a plumbed line to the rear of the base with a shutoff at the oven; propane needs a cylinder and regulator on the base shelf. Either way a licensed gas fitter slides the head through the port, mounts the gas train behind the oven, connects the supply, and leak tests it. No drilling is involved.
🍕 Lisboa or Pizzaioli: which dome is better for gas? ▼
The burner works the same in both. Choose the Lisboa dome if you will roast, because its split Dutch door takes the rotisserie spit and a chicken turns in front of a flame that never needs feeding; it is also the one in stock. Choose the Pizzaioli dome if pizza is most of the plan, since its lower ceiling keeps the rear flame close to the pie and its 19.7 inch door is the widest in the range; it is built to order at about 12 weeks.
🍕 Can I get a Stone Arch, Rustic, Lume, or Ventura as a hybrid? ▼
Not from stock. Authentic Pizza Ovens drills only the Lisboa Premium and Pizzaioli Premium as standing hybrid items. Any other dome in the range can be ordered drilled through Crustify at that oven's list price plus $500, with a build time of 12 to 15 weeks in Portugal. Ask before ordering anything and we will confirm the lead time with the factory in writing before your card is charged.
🍕 I already own an Authentic Pizza Ovens dome. Can it be converted? ▼
Not by the maker. The hybrid port is formed before the outer shell is cast, and Authentic Pizza Ovens does not offer a retrofit drilling service on a finished oven. Vamparossa does advise owners on field installations into existing refractory ovens; contact them directly about your dome. Understand that any opening cut into the oven other than the factory port falls outside the three year warranty.

The Lisboa dome takes the 100T fit of the Authentic Pizza Ovens brick oven cover and the Pizzaioli dome takes the 100W; the warranty requires the maker's cover whenever the oven is not in use, and covers are dome specific and not returnable, so match it to your variant. With the burner installed the head stays in the port under the cover. Without one, keep the port closed against rain the same way you keep the door shut.
