Description
The GX-C2 handles family pizza nights. The GX-B1 handles serious entertaining with its added side shelves and wider footprint. The GX-D1 is what you buy when both of those ovens are not big enough for what you are trying to do.
At 46 inches wide and 700 pounds of oven, the GX-D1 is the largest freestanding wood-fired pizza oven in the Tuscan Chef portable lineup and one of the largest production wood-fired outdoor ovens available at any price point. Its cooking chamber is 36.25 inches wide and 18.5 inches deep, giving you enough floor space to run three 18-inch pizzas simultaneously, or two 20-pound turkeys at the same session. This is not a home pizza night oven. It is an oven built for the buyer who regularly feeds large groups, runs outdoor cooking events, or wants the kind of capacity that means nobody waits for the next round to come out.
The scale of the GX-D1 does not change the fundamental engineering that makes the Tuscan Chef lineup distinctive. The dual-chamber design is exactly the same as on the GX-C2 and GX-B1. The lower chamber is a dedicated firebox lined with 1-inch thick refractory fire brick to withstand sustained high-temperature burning. The upper chamber is the cooking space, separated from the fire by the chamber wall and connected to it by vents on both sides that allow smoke to travel upward and flavor everything cooking above. The result is the same as it is on the smaller models: authentic wood-fired smoke character in your food without ash contamination, and the ability to add wood mid-session without touching anything you are cooking.
Where the GX-D1 differs from the smaller ovens in practice is in how it handles heat at scale. The larger fire chamber interior, 38.5 inches wide by 16 inches deep, accommodates larger pieces of hardwood and more wood volume per load, which means longer sustained burns and less frequent wood additions during a long session. The 2-inch insulation surrounding both chambers, wrapped in 304 stainless steel, holds operating temperature more consistently across a 46-inch cooking width than smaller ovens can across their narrower profiles. This is relevant when you are running three pizzas at once and need consistent temperature across the full cooking surface rather than hot and cool zones.

The cooking chamber gives you two simultaneous working surfaces. A 1.25-inch thick ceramic cooking stone forms the chamber floor, absorbing intense heat from below and releasing it evenly upward into whatever cooks on its surface. A removable stainless steel wire shelf above it creates a second working level for additional pizzas, side dishes, or dishes that benefit from slightly different temperatures at upper height. The combination gives you two to four times more usable cooking space than single-surface ovens of comparable footprint.
Construction follows the full Tuscan Chef specification. The exterior is 6mm quarter-inch welded steel with high-heat flat black paint on all steel surfaces. The exterior wrap is 304 stainless steel over 2 inches of insulation surrounding both chambers. The fire chamber door is 1-inch thick refractory fire brick with an adjustable damper for precise airflow control. An external stainless steel thermometer lets you monitor internal temperature without opening the oven door. Spiral heat-deflecting metal handles on both the fire chamber door and the oven door make operation safer during high-temperature sessions.
The cart is proportionally sized for a 700-pound oven and rolls on five heavy-duty casters with two locking wheels. The lower cart shelf provides storage for your wood supply. Due to the weight of the oven, lifting chains are included with the purchase to assist with placement and positioning.
Temperature range runs from 250°F to 950°F. Most pizza cooking happens between 700 and 900°F where thin crust pizza cooks in approximately 4 minutes. The GX-D1 arrives 95 percent pre-assembled and requires approximately 30 minutes to complete setup. An initial curing session of approximately one hour prepares it for full-temperature cooking. It can be used year-round including cold climates with gradual heating.
