Description
The Kucht Venice pizza oven is the lowest priced full size wood fired oven on a cart that we sell, and the only firebrick pizza oven at its price with the cart in the box: a real wood fire, two pizzas at a time and nothing to build. It is a high thickness stainless steel dome over a firebrick floor 31 inches wide and 22 deep, on its own stainless cart with locking casters, a wood shelf and two fold down side tables, in stainless, red or yellow. No gas line, no cord, no masonry; seasoned hardwood and about 45 minutes, and it is at temperature.
Wood is the whole point of this oven, so the wood matters. Hardwood seasoned to 20 percent moisture or less, the figure the University of New Hampshire Extension gives for firewood that burns clean, is what brings a Kucht Venice pizza oven to its 800°F rating and keeps the stainless chamber free of resin. Green wood smokes and runs cool in any oven; in a stainless dome with a firebrick floor it also robs the brick of the heat that cooks the base. Buy dry oak, hickory or fruit wood in splits that fit the 20 inch door, and the oven does the rest.

Firebrick Under a Stainless Dome: How the Kucht Venice Pizza Oven Cooks
A wood fired oven cooks a pizza three ways at once: the floor crisps the base by contact, the dome reflects radiant heat onto the toppings, and the hot air under the ceiling colors the rim. The Kucht Venice pizza oven gives each job the right material. The floor is firebrick, which absorbs heat from the fire slowly, holds it deep in the brick and gives it back to every pizza that lands on it, so the base crisps from below rather than steaming on a cooling surface. The dome and walls are high thickness stainless steel, which heats fast and throws the fire's heat back down over the food.
That pairing is what separates the Kucht Venice pizza oven from the thin steel ovens at its size. A thin dome with a thin stone loses its floor heat on the first pizza and spends the rest of the night recovering; a firebrick floor recovers between launches, which is why the second and third pizzas cook like the first. Kucht rates the oven at 800°F, and it gets there in about 45 minutes on three or four splits with the chimney damper open, then holds cooking heat for the evening with the damper closed down and a split added when the flame drops.
The 15 inch chamber height is the other reason this oven is more than a pizza oven. There is room over the floor for a roasting tray, a Dutch oven or a whole chicken on a rack, and the door, 20 inches wide by 8 high, takes a half sheet pan flat. The built in gauge reads the chamber air; the HPC Fire infrared thermometer reads the brick, which is the number that decides when the first pizza goes in. The Cart Is Part of the Oven
Most wood fired ovens this size sell the oven and charge for the stand. The Kucht Venice pizza oven ships with its cart, built to the same standard as the dome: stainless throughout, four locking casters so the setup rolls to where the party is and stays put once it is there, a lower shelf that holds an evening's firewood within reach, and two fold down stainless side tables, one each side, for the peel, the toppings and the pizza that just came out. Unfolded, the side tables are the landing space a two pizza oven needs; folded, the oven fits under its cover without widening the patio footprint.
The whole setup stands 34 inches tall with the cooking floor at working height, 43 inches wide and 47 deep on the cart, and the chimney with its cap adds the rest. Roll it onto a level paver patio, a concrete slab or a stone terrace and lock the casters; on a wood deck it wants a non combustible pad under it and the clearances in Kucht's manual to railings, siding and anything overhead. Building the Fire and Cooking in the Kucht Venice Pizza Oven
Open the chimney damper, stack three or four splits of dry hardwood at the back of the firebrick floor over kindling, and light it with the door off. In about 45 minutes the dome has burned clean and the gauge is in pizza range; give the brick a few more minutes, since the floor lags the air. Rake the coals to the back and one side, keep a split burning for flame, sweep the floor, and launch two 12 inch pizzas side by side. Quarter turn each as the rim colors; they come out in a few minutes, base crisp from the brick, top blistered from the flame.
Then close the damper down, set the door on and let the Kucht Venice pizza oven do what a firebrick floor and a stainless dome do best on the way down. A tray of vegetables, a spatchcocked chicken, a cast iron steak seared on the brick, potatoes in a skillet at the edge of the coals, and bread once the fire has dropped to embers and the door has been on for a while. One fire, a whole dinner, which is the arithmetic that makes a wood fired oven worth the wood.
The wood decides everything. Seasoned oak, hickory, beech or maple in 8 to 10 inch splits gives a clean, steady fire; fruit woods like apple and cherry add a sweeter smoke for roasts. Kucht makes two pizza ovens and they answer two different buyers. The Kucht Venice pizza oven is the wood fired oven with the bigger floor, on a cart, for the cook who wants the fire. What Comes in the Box, and What the Venice Needs From You
The crate holds the Kucht Venice pizza oven dome, the stainless cart with its casters and lower shelf, the two side tables, the chimney with its damper, an all weather cover, a brush scraper and a pizza peel. Assembly is the cart, the chimney and the lift: the oven goes onto the cart by two people, and Kucht says so in the manual, so have the second pair of hands ready on delivery day. Inspect the crate before you sign and note any damage on the delivery receipt, because a clean signature gives up most of your protection on a freight claim.
What it needs from you is a level, non combustible surface, open sky above the chimney cap, the clearances in the manual, a supply of seasoned hardwood in splits that fit the door, and a turning peel, which the box does not hold. Buy the Red or the Yellow if it is meant to be seen; buy the Stainless if it is meant to match.

INSTALLATION GUIDE & USER MANUAL
Site. A level, non combustible surface that takes the cart's casters: pavers, a concrete slab or a stone terrace. On a wood deck, a non combustible pad under the cart. Open air only, with open sky above the chimney cap and the clearances to combustibles that Kucht's manual sets out for railings, siding and anything overhead. Not indoors, not in a garage, not under a low roof, and not on a vehicle.
Assembly. Assemble the cart and fit the casters, then lift the oven onto it with two people; the Kucht Venice pizza oven is the heavy part of the 233 pound crate. Fit the chimney with its damper, hang the door and unfold the side tables. Lock the casters before the first fire.
First fires. Two or three small fires of dry hardwood before the first full heat, to drive any moisture out of the firebrick gently. Never softwood, treated lumber, charcoal briquettes or accelerants.
Every fire. Damper open, door off, three or four splits at the back of the floor. In about 45 minutes the dome burns clean and the gauge is in pizza range; give the brick a few more minutes. Rake the coals to the back and one side, keep a split burning for flame, sweep the floor and cook through the open door. For roasting and bread, close the damper down and set the door on.
After cooking. Let the oven cool completely. Shovel cold ash out the next morning, sweep the brick, wipe the stainless with soapy water and no abrasives, fold the tables and fit the cover.

WARRANTY INFORMATION
Term. Kucht Professional warrants the Kucht Venice pizza oven for four years, parts and labor, to the original purchaser from an authorized dealer. Crustify is an authorized Kucht dealer, so an oven bought here carries the full term.
Conditions. Kucht rates all of its pizza ovens for outdoor residential use only. Installation on a food truck, trailer or any vehicle, indoors, in a garage or in a commercial kitchen falls outside the warranty, and Kucht suggests a commercial oven for those uses. Burn seasoned hardwood only, keep to the clearances in the manual, and keep the oven covered when not in use.
After the term. Kucht offers lifetime support by video chat for any issue that arises after the four years end.
Claims. Contact us first with your order number, photos and a description, and we handle the claim with Kucht on your behalf.
