Description

The Authentic Pizza Ovens chimney extension is the piece that decides where the smoke goes. Every APO oven leaves the factory with a short stainless spout on the dome, and a short spout is fine in an open yard. Put the same oven under a covered patio, beside a wall, or under an eave, and the smoke leaves the spout, hits the cover, and rolls back down onto whoever is holding the peel. This pizza oven chimney extension lifts the outlet above that. It is a 5.5 inch diameter single wall stainless pipe with a male end and a female end, so it drops straight onto the oven's spout, takes APO's cap on top, and stacks with a second pipe if you need more height.

It comes in two lengths on this page: 12 inch and 38 inch. The 38 inch is the one most brick oven owners want, because three feet is what it takes to get the outlet past a patio roof or a pergola beam, and it can be cut shorter if the spot calls for something in between. The 12 inch is for an oven in the open that wants a tidy stack tall enough to carry a cap, or for a low beam that leaves no room for more. Draft is the second reason to buy a pizza oven flue extension. A wood fired oven pulls its air through the door and pushes it out the flue, and a taller flue pulls harder, so an extended stack lights easier, holds a cleaner fire, and clears the smoke out of the dome faster on the way up to temperature. How It Seats on the Oven

Every Authentic Pizza Ovens dome carries a 5.5 inch stainless spout, roughly 6 inches tall, with a damper plate inside it on the brick ovens. The chimney extension's female end drops over that spout and sits down on the collar. There are no screws, no sealant, no gasket, and no tools; the pipe stays put by fit and by its own weight, and the cap sits in the top of the pipe the same way. Setting it up is lifting the pipe on, then the cap, and it comes off just as easily when the oven is cold and the cover is going on.

The damper stays where it is. It lives in the oven's spout below the extension, so a 38 inch chimney pipe on top does not change how you run it: open for lighting and for pizza, part closed to hold heat for bread and roasts with the door on. The pipe is single wall, which is right for an outdoor oven that is never connected to a house flue, and it runs hot enough near the base that you treat it like the oven: gloves on, nothing leaning against it, nothing combustible within reach of the outlet.

The pipe is plain stainless, 5.5 inches across, with the female end crimped to take the next piece. Which Length

Start with the obstruction. If the oven sits in the open, with nothing above it but sky, the 12 inch chimney pipe is enough: it gets the outlet a foot higher, lifts smoke over the head of whoever is at the door, and carries the cap that keeps rain out of the dome. That is the setup in the photo above, a Pizzaioli Premium under a high covered porch with the 12 inch and the cap, where the roof is far enough above the oven that a foot of pipe clears the cook and the beam does the rest.

If the oven sits under a patio roof, a pergola, or a canopy, or within a few feet of a wall or a house eave, the 38 inch chimney pipe is the one. Smoke that leaves a short spout under a cover has nowhere to go but sideways and down, and three feet of pipe is usually what it takes to put the outlet above the cover or past the edge of the eave so it can lift away. Measure from the top of the spout to the underside of the cover, add a few inches for the cap, and buy the length that gets past it. If 38 is too much, the 38 inch pipe cuts.

Cut the plain male end, not the crimped female end, with a hacksaw, a metal blade in a jigsaw, or a cutoff wheel, and file the burr so the cap seats. The 12 inch is not meant to be cut. If you need something between 38 and 50 inches, a 12 inch on top of a 38 inch is the cleaner answer than cutting a second 38.

Stacking for Height

Because every pizza oven chimney extension on this page has a male end and a female end, they stack. A 12 inch on a 38 inch is a 50 inch run; two 38 inch pipes are 76 inches; the cap fits the top of whichever pipe is last. The oven above runs a tall stack with the cap on it, and that is the picture of an oven that lives under trees and near a house and wants the smoke well clear of both.

Keep a stacked run plumb and seat the joints fully. A tall stack that leans pulls air unevenly and can work loose in wind, and a joint that is not seated is where the smoke escapes on its way up. In a windy spot, or on any stack of two pipes, one stainless self tapping screw through the joint is cheap insurance; most owners never need it, but it costs nothing to add. Above about 6 feet of added pipe on a brick dome, ask us first. A very tall single wall stack outdoors can cool the flue gases enough to hurt the draw it was meant to improve, and there is usually a better answer, like moving the oven a foot out from the wall.

Never extend into or connect to a house chimney, a range hood, or any other flue. This is an outdoor wood fired pizza oven chimney, open to the sky, and that is the only way it is designed to run.

Care

That is heat tint, it is cosmetic, and it is not rust. If you want the polish back, a stainless cleaner and a soft cloth on a cold pipe will lift most of it; if you prefer the patina, leave it alone. Do not use a wire brush or steel wool, which scratch the surface and leave carbon steel particles that will rust.

Once or twice a season, lift the pizza oven chimney extension off and look inside. A hot fire leaves almost nothing; a run of low, smoky fires leaves a soft brown film that brushes out with a flue brush or a rag on a stick. Check the cap screen at the same time, since a screen that has clogged with ash is a screen that is choking the draw. The chimney and cap come off before the oven cover goes on, every time, so the pipe never sits trapped under a wet cover.

INSTALLATION GUIDE & USER MANUAL

Before you start. The oven should be set on its base, level, and cold. Take the cap off the spout if one is fitted. Check the spout collar for anything loose from shipping, and if the oven has just arrived, run the first curing fires with the short spout before you add height; the pipe does not change the cure schedule.

Fitting. Hold the pipe with the crimped female end down. Lower it over the spout until it seats on the collar; it should drop the last inch under its own weight. Sight it from two sides to make sure it is plumb. Fit the cap into the top of the pipe. That is the whole job on a single pipe.

Stacking. Fit the first pipe as above, then lower the second pipe's female end over the first pipe's male end and seat it fully. Check plumb again. On any two pipe stack, or a single pipe in a windy spot, drive one stainless self tapping screw through the joint from the side. Cap the top pipe.

Cutting the 38 inch. Measure from the top of the spout to the point you need to clear, add 3 inches for the cap, and mark the pipe from the female end. Cut at the plain male end with a hacksaw, a metal blade in a jigsaw, or a cutoff wheel. File the burr inside and out so the cap seats. Cut once.

Running the oven. Nothing changes at the door. Light as usual with the damper open; the taller stack will draw harder and the dome will clear sooner. Close the damper down for retained heat cooking the way you always have. Keep anything combustible clear of the outlet.

Care. Lift the pipe and cap off before the cover goes on. Once or twice a season, look inside, brush out any film, and check the cap screen. Clean the outside with a stainless cleaner on a cold pipe if you want the polish back.

WARRANTY INFORMATION

Term. Authentic Pizza Ovens covers the chimney extension against defects in the material and the seam under its accessory warranty, from the date of delivery, to the original purchaser.

Exclusions. Heat tint and discoloration of the stainless steel are normal and not defects. Damage from cutting, from wire brushes or steel wool, from connecting the pipe to any other flue, or from misuse is excluded. Cut pipe cannot be returned.

Claims. Contact us first with photos and your order number and we handle the claim with APO on your behalf. Shipping damage is separate: note it on the delivery receipt or report it within five days for concealed damage.
