The Kucht Napoli pizza oven is the countertop gas oven we point weeknight cooks to first: two independent burners with 28,000 BTU between them, a firebrick floor, and a chamber that reaches pizza temperature in under 20 minutes from cold. It cooks a 12 inch pizza in under two minutes, sits on an outdoor kitchen counter or a patio table at about 125 pounds, and comes in stainless, red or yellow. Kucht calls it a little beast, and for a propane countertop pizza oven this size, that is the right name.

Under two minutes at full heat is the Neapolitan number. The Associazione Verace Pizza Napoletana defines a true pizza napoletana by a floor around 430°C and a bake of 60 to 90 seconds, and the Napoli reaches that range because its floor burner heats the firebrick from below while the rear burner rolls flame across the dome. Most countertop gas ovens this size have one burner and one knob. Two Burners, Two Knobs: How the Kucht Napoli Pizza Oven Cooks

Every gas pizza oven has to solve one problem: the base and the top of a pizza want different heat. The base wants a hot, dense floor that sets the dough in seconds; the top wants flame rolling over it to blister the rim and color the cheese. A single burner oven splits the difference and you manage the rest by turning the pizza. The Kucht Napoli pizza oven gives each job its own burner. The floor burner drives heat straight into the firebrick, and the rear burner circulates flame around the dome, each on its own front knob.

What that buys you is control the way a pizzaiolo has it. A thin Neapolitan with a wet center runs more floor and less dome so the base sets before the top overcooks. The firebrick floor is the other half of the design. Where the Napoli Lives: Counter, Table or the KNC200 Cart

The Kucht Napoli pizza oven is a countertop oven first. At about 125 pounds it sits on an outdoor kitchen counter, a block base or a sturdy patio table without an engineer's opinion, and four adjustable legs level it on a surface that is not quite flat. The surface has to be non combustible and rated for the weight, the chimney needs open sky above it, and the sides want the clearance from siding, railings and anything combustible that Kucht's manual sets out; the manual is linked in the installation row below.

If there is no counter, Kucht makes the Napoli cart, the KNC200: a stainless stand built for the oven's footprint, with a side table each side for the peel and the toppings, enclosed storage below for the propane cylinder and locking casters, which turns the countertop oven into a freestanding station that rolls to where the party is. Gas is the simplest part. The Kucht Napoli pizza oven runs on a standard 20 pound propane cylinder through the hose in the box, stored upright and never under or beside the oven while it runs unless it sits in the cart's enclosed cabinet, which is designed for it. Can the Kucht Napoli Go on a Food Truck? The Answer, and the Three Ovens That Can

We are asked this about the Kucht Napoli pizza oven more than about any other oven we sell, five or six times in the last few months alone, and it is easy to see why. It is 125 pounds, it runs on propane, it needs no electricity, it fits a truck counter and it cooks a Neapolitan pizza in two minutes. On paper it is the pizza oven for a food truck a small concept wants. The answer is still no, and we would rather say it here than after the order.

Kucht's position, in writing to us: all Kucht pizza ovens are for outdoor residential use only, and Kucht suggests a commercial oven for a food truck. That is the maker's rating, not ours, and a Napoli mounted on a truck or trailer, or installed in any commercial kitchen, sits outside the four year warranty whatever the health inspector says about it. Some inspectors would pass it; that does not change what Kucht will stand behind. Nothing in this page or in our chat should be read as approval for a mobile installation.

A truck also asks questions a residential oven cannot answer. The inspector wants a listing an inspector recognizes, a commercial hood and suppression plan, and clearances the maker publishes for a mobile unit. The Kucht Napoli pizza oven has none of those in its paperwork, and that is the gap a commercial oven fills. INSTALLATION GUIDE & USER MANUAL

Site. A level, non combustible surface rated for the Kucht Napoli pizza oven's 125 pounds: an outdoor kitchen counter, a block base, a sturdy patio table or the KNC200 cart. Open air only, with open sky above the chimney and the clearances to combustibles that Kucht's manual sets out. Not indoors, not in a garage, not under a low roof, and not on a vehicle.

Assembly. Fit the chimney to its collar, hang the stainless door, and thread the four adjustable feet in, then level the oven with them. Basic hand tools; about twenty minutes.

Gas. Connect the included hose to a standard 20 pound propane cylinder stored upright, away from the oven's sides and never beneath it unless it sits in the cart's enclosed cabinet. Soap test the connection the first time and after every cylinder change. There is no natural gas conversion for the Napoli.

Lighting and preheat. Door off, chimney damper open, both knobs high, electronic igniter. In under 20 minutes the gauge reads pizza range; give the firebrick a few more minutes before the first launch, and check it with an infrared thermometer if you have one. Turn the floor burner down for bread and roasts and close the damper down to hold heat.

After cooking. Burn spills off at full heat, sweep the brick when cold, wipe the stainless with soapy water and no abrasives, and fit the cover once the oven is fully cool.
