It shares the same core engineering as the GX-C2, the same dual-chamber firebox design, the same 2-inch insulated construction, the same dual cooking surfaces, and the same 950°F maximum temperature, but adds two permanent stainless steel side shelves built into the cart frame on both sides of the oven. Those shelves change the practical experience of cooking on this oven in ways that are difficult to overstate until you have worked through a busy session handling multiple dishes, tools, peels, and serving plates with nowhere to put them.
The side shelves are not an accessory. They are part of the cart structure, which means they are always there, always at the right height, and always stable enough to hold a heavy cast iron pan or a loaded pizza peel while you manage the oven. The cooking system itself is the same proven dual-chamber design that separates the Tuscan Chef lineup from most of its competitors. The lower chamber is a dedicated firebox. The upper chamber is where cooking happens. Two side vents connect the chambers, allowing smoke to rise from the fire into the cooking space and impart authentic wood-fired flavor without allowing ash to contaminate your food. You load wood into the lower firebox and your food never comes in contact with flame, ash, or disruption. When you need to add wood mid-session, you open the lower fire door, load more hardwood, and close it again without touching anything in the cooking chamber above.
The cooking chamber gives you two simultaneous working surfaces. A 1.25-inch thick ceramic cooking stone sits at the chamber floor, absorbing intense heat from below and delivering it consistently into whatever cooks on its surface. A removable stainless steel wire shelf above it creates a second level for a second pizza, for side dishes, or for anything that benefits from the slightly different temperature environment of the upper position. Together the two surfaces give you two to four times more usable cooking capacity than a single-surface oven of comparable size.
The wider 34-inch footprint of the GX-B1 compared to the GX-C2's 27.5-inch width also means a wider fire chamber interior, 21 inches versus 20 inches, giving you more room to work with larger pieces of hardwood and maintain heat more easily over extended sessions. The overall oven profile is the same 92-inch total height with chimney and cap.
Construction follows the same specification as the rest of the Tuscan Chef lineup. The exterior is 6mm quarter-inch welded steel with high-heat flat black paint on all steel surfaces. The sides and top are wrapped in 2 full inches of insulation before finishing in 304 stainless steel. The fire chamber door is 1-inch thick refractory fire brick with an adjustable damper for precise airflow and temperature control. A stainless steel thermometer mounts externally so you can monitor internal temperature without opening the oven door and dropping heat.
Temperature range runs from 250°F at the low end for gentle baking through to 950°F at peak for high-heat pizza sessions. A thin crust pizza cooks in approximately 4 minutes at 650°F. Holding 700°F requires adding wood approximately every 20 to 30 minutes. Lower temperature cooking extends that to approximately every 40 minutes.
The cart rolls on four heavy-duty casters with two locking wheels for stability during cooking, and the lower cart shelf provides storage for your wood supply. The GX-B1 arrives 95 percent pre-assembled and requires approximately 30 minutes to complete setup. An initial curing session of approximately one hour prepares the oven for full-temperature cooking. It can be used year-round including cold climates with gradual heating.
