Description
The GX-D1 gives you the full cooking power of the largest Tuscan Chef oven on a wheeled cart you can move around your patio. The GX-DL gives you exactly the same oven with exactly the same cooking capacity, but without the cart, specifically because you do not need one.
The GX-DL is the configuration for the buyer who is building a permanent outdoor kitchen structure, setting the oven into a custom masonry countertop, integrating it into a stone or concrete island, or positioning it on an existing non-combustible countertop surface where a wheeled cart would be redundant and out of place. The oven itself is identical to the GX-D1 in every performance respect. Same 46-inch width. Same 700-pound oven. Same dual-chamber design. Same 36.25-inch wide cooking chamber. Same three 18-inch pizzas at once. The only thing missing is the cart you did not want anyway.
That cooking capacity is genuinely significant. Three 18-inch pizzas simultaneously means you can run a full pizza service for a large group without any staging or waiting. Two 20-pound turkeys at the same session means Thanksgiving or a large outdoor dinner can happen in a single cook. The GX-DL brings that capacity permanently into whatever structure it is built into, which means it is available every time you use your outdoor kitchen rather than something you wheel out for special occasions.
The dual-chamber engineering is the same system that distinguishes every Tuscan Chef oven from conventional single-chamber alternatives. The lower chamber is a dedicated firebox lined with 1-inch thick refractory fire brick. The upper chamber is the cooking space. Two side vents connect them, allowing smoke to travel upward from the fire and flavor everything in the cooking chamber while ash remains completely contained below. You never need to remove food, manage ash contamination, or disrupt your cook to add wood. Open the lower fire door, add hardwood, close it, and the cooking chamber above is completely undisturbed.

The cooking chamber itself provides two simultaneous working surfaces. A 1.25-inch thick ceramic cooking stone forms the chamber floor, absorbing intense heat from below and releasing it evenly into whatever sits on its surface. A removable stainless steel wire shelf above it creates a second working level. The combination provides two to four times more usable cooking capacity than single-surface ovens of comparable footprint.
Construction follows the full Tuscan Chef specification. The exterior is 6mm quarter-inch welded steel with high-heat flat black paint. The sides and top are wrapped in 2 full inches of insulation finished in 304 stainless steel. The fire chamber door is 1-inch thick refractory fire brick with an adjustable damper for precise airflow control. An external stainless steel thermometer lets you monitor internal temperature without opening the oven door. Spiral heat-deflecting metal handles on both the fire chamber door and the oven door make operation safer at high temperatures.
Temperature range is 250°F to 950°F. Most pizza cooking happens between 700 and 900°F where thin crust pizza cooks in approximately 4 minutes. To maintain 700°F, add wood approximately every 20 to 30 minutes. Lower temperatures require wood additions approximately every 40 minutes.
The GX-DL arrives 95 percent pre-assembled and requires approximately 30 minutes to complete setup, plus whatever time your built-in application requires for the surrounding structure. An initial curing session of approximately one hour prepares it for full-temperature cooking. Due to the oven's weight of 700 pounds, lifting chains are included with the purchase to assist with placement.
The GX-DL must be placed on or built into a non-combustible surface or structure. It is the buyer's responsibility to ensure the installation meets local bylaws and safety requirements for high-temperature outdoor cooking equipment. Check local codes before beginning your build.
