Description

Most outdoor pizza ovens ask you to make a permanent choice before you buy. Wood fire or gas. Authentic flavor or weeknight convenience. The Pinnacolo IBRIDO refuses that choice entirely.

IBRIDO means hybrid in Italian and that name is the entire product philosophy in a single word. This is a genuine dual fuel freestanding pizza oven that runs on real hardwood or propane gas in the same cooking chamber without compromise in either mode. Switch between them based on the session, the occasion, the weather, or however much time you have. A Saturday afternoon with guests coming over calls for wood fire and the theater that comes with it. A Tuesday night when dinner needs to happen in 30 minutes calls for gas. The IBRIDO handles both without requiring you to own two ovens or make a permanent lifestyle decision at the point of purchase.

The cooking chamber is built around a double-wall insulated dome finished in a durable black porcelain enamel coating, the same material used inside conventional home ovens, applied here specifically because it handles repeated thermal cycling, moisture exposure, and the demands of outdoor use across multiple seasons without degrading. The insulation between the two walls retains heat efficiently in both fuel modes, which means the oven reaches and holds temperature without requiring excessive wood volume or extended gas burn time.

The cooking surface is wall-to-wall cordierite stone covering 745 square inches, approximately 29.5 inches by 25.25 inches. Cordierite is the right material for this application. It is thermally shock resistant, which means it can move from ambient outdoor temperature to 800°F and back repeatedly without cracking the way cheaper ceramic stones eventually do. It conducts heat aggressively into the base of the dough, which is what produces a genuinely crispy structured crust rather than the soft underside you get from a baking tray or a steel plate.

In gas mode the rear-mounted 35,000 BTU propane burner lights via electronic ignition with a press and turn start. Rear mounting keeps the burner out of the loading zone when you are working with a pizza peel, which is a practical detail that makes a real difference during an active session. A stainless steel burner cover protects the burner when you switch to wood mode. In wood mode the lower cart section provides protected storage for your fuel supply alongside the propane tank storage area, keeping wood dry and accessible without cluttering your cooking space.

Two 14-inch stainless steel side shelves extend your working surface on both sides of the oven. A fixed thermometer mounted on the oven gives you a continuous ambient temperature reading without opening the door. An adjustable chimney damper lets you control airflow and temperature precisely in both fuel modes. A front-mounted crossbar with S-hooks keeps your peels and tools organized at the oven rather than scattered across a prep table.

Four locking swivel casters give you full mobility to position the oven exactly where your session needs it and lock it firmly in place once positioned. The full stainless steel construction on both the oven and the matching cart is built to live outdoors year-round in whatever conditions your backyard produces.

The IBRIDO ships with a complete accessory package already in the box. You are not buying a bare oven and sourcing tools separately. Everything you need to cook from the first session is included.

CSA approved and backed by a manufacturer warranty, the IBRIDO is the right choice for the serious outdoor cook who wants genuine wood-fired performance and genuine gas convenience from one oven without compromise in either mode.
